- 2 cups simply potatoes® shredded hash browns
- 1 cup shredded chicken
- 3 tablespoons light mayonnaise
- 1 tablespoon curry powder
- 8 lettuce leaves, for serving (i like red lettuce)
Recipe
- 1 cook simply potatoes shredded hash browns according to directions.
- 2 in a medium bowl combine chicken, cooked hash browns, mayonnaise, and curry powder.
- 3 mix well.
- 4 divide equally among the lettuce leaves. roll. enjoy!
- 5 note: this recipe can be eaten right away, but is best left to refrigerate for one hour to allow the flavors to develop.
