No Worries Chicken Curry Potato Salad #5fix

Ingredients

  • Servings: 4
  • 2 cups simply potatoes® shredded hash browns
  • 1 cup shredded chicken
  • 3 tablespoons light mayonnaise
  • 1 tablespoon curry powder
  • 8 lettuce leaves, for serving (i like red lettuce)

Recipe

  • 1 cook simply potatoes shredded hash browns according to directions.
  • 2 in a medium bowl combine chicken, cooked hash browns, mayonnaise, and curry powder.
  • 3 mix well.
  • 4 divide equally among the lettuce leaves. roll. enjoy!
  • 5 note: this recipe can be eaten right away, but is best left to refrigerate for one hour to allow the flavors to develop.
