Lemon Cream Sauce

Ingredients
- 3 tablespoons butter
- 2 cups heavy cream
- 2 cups chicken broth (or vegetable broth for vegetarians)
- 1 lemon, zested and juiced
- 3 large shallots
- 1/4 teaspoon cayenne pepper
- fresh parsley, for garnishing
Recipe
- 1 mince shallots. melt butter in pan, then sautee shallots over medium heat until translucent, but not browned. about 2 minutes.
- 2 pour in chicken broth, simmer over medium-low heat until reduced to about half a cup. about 10-15 minutes.
- 3 pour in heavy cream, simmer over medium-low heat until sauce thickens. about 10 minutes.
- 4 mix in lemon juice and lemon zest.
