Lemon Dill Carrots

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 6
  • 1 teaspoon olive oil
  • 3 cups diagonally cut carrots
  • 1/4 cup reduced-sodium fat-free chicken broth
  • 1 teaspoon grated fresh lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon minced fresh dill or 1 teaspoon dried dill

Recipe

  • 1 heat the olive oil in a large nonstick frypan over medium high heat.
  • 2 add carrot, and saute for 2 minutes.
  • 3 stir in broth, rind, juice, celery salt and 1/4 teaspoon black pepper.
  • 4 cover, reduce heat to medium low and cook for 10 minutes or until tender, stirring occasionally.
  • 5 remove from heat, stir in dill.
