Meateaters' Gazpacho

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (14 ounce) can chicken broth
  • 1 small onion, diced
  • 1 green pepper, diced
  • 1 stalk celery, diced
  • 1 garlic clove, diced
  • 1 small onion, minced
  • 1 cucumber, minced
  • 1 green pepper, minced
  • 1 stalk celery, minced
  • 2 tomatoes, minced
  • 1/2 teaspoon cumin powder

Recipe

  • 1 combine broth and diced vegetables in pot. simmer on medium heat until vegetables are tender. let cool.
  • 2 when broth mixture is cooled, add minced vegetables and cumin, mixing well.
  • 3 store in refrigerator until ready to serve.
