Raspberry-balsamic Chicken

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 4 boneless skinless chicken breast halves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium shallot, minced
- 1/2 cup chicken broth
- 1 teaspoon cornstarch
- 3 tablespoons seedless raspberry jelly or 3 tablespoons raspberry jam
- 2 tablespoons balsamic vinegar
Recipe
- 1 heat oil in 12 inch skillet.
- 2 add chicken and sprinkle with salt and pepper.
- 3 cook and brown on both sides until done.
- 4 remove from pan.
- 5 to skillet drippings add shallots, cook 2 minutes.
- 6 mix broth and cornstarch.
- 7 add broth, jelly and vinegar to skillet.
- 8 heat to boiling; cook until thickened.
- 9 return chicken; heat through.
