Raspberry-balsamic Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium shallot, minced
  • 1/2 cup chicken broth
  • 1 teaspoon cornstarch
  • 3 tablespoons seedless raspberry jelly or 3 tablespoons raspberry jam
  • 2 tablespoons balsamic vinegar

Recipe

  • 1 heat oil in 12 inch skillet.
  • 2 add chicken and sprinkle with salt and pepper.
  • 3 cook and brown on both sides until done.
  • 4 remove from pan.
  • 5 to skillet drippings add shallots, cook 2 minutes.
  • 6 mix broth and cornstarch.
  • 7 add broth, jelly and vinegar to skillet.
  • 8 heat to boiling; cook until thickened.
  • 9 return chicken; heat through.
