Pineapple Chicken

Ingredients

  • Servings: 4
  • 1 cup juice-packed pineapple, drained
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons wine vinegar
  • 1 teaspoon dry mustard
  • 1 tablespoon minced fresh ginger
  • 4 chicken breasts, skin and fat removed
  • 2 cups sliced fresh mushrooms
  • 1 green pepper, seeded and cut into 1-inch chunks
  • 1 red bell pepper, seeded and cut into 1-inch chunks
  • 4 green onions, sliced into 1-inch pieces

Recipe

  • 1 combine pineapple, say sauce, vinegar, mustard, and ginger. arrange chicken breats and begetables in a baking dish coated with cooking spray. pour sauce over. cover with foil and bake at 325 degrees for 30 to 40 minutes or until chicken is done.
