Pineapple Chicken

Ingredients

- 4 boneless skinless chicken breasts
- 1/2 teaspoon garlic powder
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1/2 cup sugar substitute
- 1 (8 ounce) can pineapple chunks, drained, with 1/4 cup juice reserved
- 3/4 cup vinegar
- 3/4 cup ketchup
- 1 teaspoon low sodium soy sauce
- 3/4 teaspoon salt
Recipe
- 1 heat oven to 350.
- 2 spray 9x13 pan with cooking spray.
- 3 season chicken with garlic powder.
- 4 dip chicken in egg, then flour.
- 5 put chicken in pan.
- 6 in saucepan, mix together sugar, pineapple juice, vinegar, ketchup, soy, and salt. bring to boil.
- 7 pour mixture over chicken and arrange pineapples around chicken.
- 8 bake uncovered 20 to 25 minutes or until internal temperature reaches 160 degrees.
- 9 plate it up and enjoy!
