Joanna's Chicken Casserole

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 3 lbs boneless skinless chicken breasts or 3 lbs chicken pieces
  • 4 teaspoons oil
  • 2 large onions, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons oil, plus extra if needed
  • 4 teaspoons lemon juice
  • 2 teaspoons grated lemon peel
  • 2 cups tomato sauce or 2 cups ketchup
  • 2 teaspoons brown sugar
  • 2 teaspoons dry mustard
  • 2 teaspoons curry powder
  • 4 teaspoons red wine vinegar (i used apple cider vinegar)
  • 2 teaspoons teriyaki sauce or 2 teaspoons soy sauce
  • salt & pepper, to taste

Recipe

  • 1 saute chicken in hot oil until golden brown; remove from pan and drain.
  • 2 pour off oil from pan and add rest of the ingredients, stirring until pan brownings are disolved.
  • 3 add chicken and cook on low heat until tender.
