Kasha Breaded Chicken Cutlets

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 4 boneless chicken breast halves
  • 1/2 cup buckwheat groats (kasha medium granulation)
  • 1/4 cup breadcrumbs (any style you like)
  • 1/4 cup wheat germ
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 eggs, beaten
  • 1 -2 garlic cloves (optional) or 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon black pepper (optional)

Recipe

  • 1 pound chicken to flatten (don't over do it).
  • 2 mix toghter buckwheat, breadcrumbs & wheat germs.
  • 3 add salt & pepper to kasha & bread crumbs mix.
  • 4 dip chicken into beaten eggs and then coat with kasha & bread crumbs mix.
  • 5 in a large skillet, heat oil over medium heat.
  • 6 saute crushed garlic until golden (you can then discard garlic if you like). instead of crushed garlic you can add 1/4 teaspoon garlic powder to the kasha & bread crumbs mix.
  • 7 place chicken in skillet cook about 5 minutes on each side, or until chicken is golden/brown on both sides.
  • 8 actual cooking time will vary depending on how thick your chicken is, make sure cutlet is fork tender.
