Kasha Breaded Chicken Cutlets

Ingredients
- 4 boneless chicken breast halves
- 1/2 cup buckwheat groats (kasha medium granulation)
- 1/4 cup breadcrumbs (any style you like)
- 1/4 cup wheat germ
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 eggs, beaten
- 1 -2 garlic cloves (optional) or 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon black pepper (optional)
Recipe
- 1 pound chicken to flatten (don't over do it).
- 2 mix toghter buckwheat, breadcrumbs & wheat germs.
- 3 add salt & pepper to kasha & bread crumbs mix.
- 4 dip chicken into beaten eggs and then coat with kasha & bread crumbs mix.
- 5 in a large skillet, heat oil over medium heat.
- 6 saute crushed garlic until golden (you can then discard garlic if you like). instead of crushed garlic you can add 1/4 teaspoon garlic powder to the kasha & bread crumbs mix.
- 7 place chicken in skillet cook about 5 minutes on each side, or until chicken is golden/brown on both sides.
- 8 actual cooking time will vary depending on how thick your chicken is, make sure cutlet is fork tender.
