Grandma's Chicken With Olives And Lemon

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 large onion, sliced thin
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • salt
  • pepper
  • 3 -4 lbs chicken pieces
  • 2 lemons, sliced
  • 1/3 cup black olives or 1/3 cup green olives, chopped
  • 1 sprig fresh rosemary

Recipe

  • 1 remove seeds from lemons.
  • 2 if using chicken breasts, cut each into thirds.
  • 3 in large pot heat oil, add chicken and lightly brown.
  • 4 add remaining ingredients, stir to coat.
  • 5 cover and simmer 1 1/2 - 2 hours.
  • 6 remove rosemary and serve.
