Grandma's Chicken With Olives And Lemon

Ingredients
- 1/3 cup extra virgin olive oil
- 1 large onion, sliced thin
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- salt
- pepper
- 3 -4 lbs chicken pieces
- 2 lemons, sliced
- 1/3 cup black olives or 1/3 cup green olives, chopped
- 1 sprig fresh rosemary
Recipe
- 1 remove seeds from lemons.
- 2 if using chicken breasts, cut each into thirds.
- 3 in large pot heat oil, add chicken and lightly brown.
- 4 add remaining ingredients, stir to coat.
- 5 cover and simmer 1 1/2 - 2 hours.
- 6 remove rosemary and serve.
