Grilled Lemon Pepper Chicken Breasts With Thyme Gremolata

Ingredients

- 1/4 cup fresh lemon juice
- 1 tablespoon fresh coarse ground black pepper
- salt
- 1/2 cup extra virgin olive oil
- 3 whole boneless skinless chicken breasts, halved (about 2 1/4 pounds)
- 1 tablespoon fresh thyme leave
- 2 garlic cloves, minced
- 1 teaspoon lemon zest, freshly grated
Recipe
- 1 whisk the lemon juice, pepper, and salt.
- 2 add the oil in a stream whisking until the marinade is emulsified.
- 3 pound breasts until about 1/4" thick.
- 4 place marinade and breasts in a resealable plastic bag and marinate in the refrigerator at least 30 minutes (can be overnight as well).
- 5 prepare grill.
