Grilled Lemon Pepper Chicken Breasts With Thyme Gremolata

Ingredients

  • Servings: 6
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh coarse ground black pepper
  • salt
  • 1/2 cup extra virgin olive oil
  • 3 whole boneless skinless chicken breasts, halved (about 2 1/4 pounds)
  • 1 tablespoon fresh thyme leave
  • 2 garlic cloves, minced
  • 1 teaspoon lemon zest, freshly grated

Recipe

  • 1 whisk the lemon juice, pepper, and salt.
  • 2 add the oil in a stream whisking until the marinade is emulsified.
  • 3 pound breasts until about 1/4" thick.
  • 4 place marinade and breasts in a resealable plastic bag and marinate in the refrigerator at least 30 minutes (can be overnight as well).
