Lemon Basil Chicken

Ingredients
- 2 -2 1/2 tablespoons dijon mustard
- 1/4-1/2 cup low-fat plain yogurt
- 4 boneless skinless chicken thighs (i usually use chicken breast instead)
- 1 grated lemon rind from 1/2 of a lemon
- 1/2 of a lemon, juiced
- 4 tablespoons chopped basil
Recipe
- 1 in a small bowl, combine the mustard and yogurt.
- 2 place chicken thighs in an oven-proof dish (at least 1 1/2" deep).
- 3 pour yogurt mixture over chicken.
- 4 sprinkle with lemon rind, juice and chopped basil.
- 5 add black pepper to taste, if desired.
- 6 bake in a moderately hot 375ºf oven for 25 minutes.
