Lemon Basil Chicken

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 2 -2 1/2 tablespoons dijon mustard
  • 1/4-1/2 cup low-fat plain yogurt
  • 4 boneless skinless chicken thighs (i usually use chicken breast instead)
  • 1 grated lemon rind from 1/2 of a lemon
  • 1/2 of a lemon, juiced
  • 4 tablespoons chopped basil

Recipe

  • 1 in a small bowl, combine the mustard and yogurt.
  • 2 place chicken thighs in an oven-proof dish (at least 1 1/2" deep).
  • 3 pour yogurt mixture over chicken.
  • 4 sprinkle with lemon rind, juice and chopped basil.
  • 5 add black pepper to taste, if desired.
  • 6 bake in a moderately hot 375ºf oven for 25 minutes.
