Parmesan, Spinach And Barley Casserole

Total Time: 3 hrs 45 mins Preparation Time: 15 mins Cook Time: 3 hrs 30 mins

Ingredients

  • Servings: 6
  • 1 (32 ounce) container chicken broth
  • 1 (16 ounce) can red beans, rinsed and drained
  • 1 (8 ounce) package mushrooms, sliced
  • 1 1/2 cups barley, uncooked
  • 1 1/2 cups onions, chopped
  • 1 teaspoon italian seasoning, dried
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 (6 ounce) package baby spinach
  • 3 ounces parmesan cheese, shredded

Recipe

  • 1 place first 9 ingredients in a 4 quart slow cooker; stir well. cover with lid; cook on high 3 hours. add spinach. cover and cook 15 minutes; stir well. sprinkle each serving with cheese.
