Pico De Gallo Chicken

Total Time: 2 hrs 10 mins Preparation Time: 2 hrs Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup orange juice (or juice from fresh oranges)
  • 3 tablespoons fresh lime juice
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil (or vegetable)
  • 1 tablespoon minced garlic
  • 1 pinch salt and pepper
  • 4 boneless skinless chicken breast halves (about 8 oz. each)
  • 1 container pico de gallo (minced onion, tomato, cilantro, garlic, and jalapeno pepper)

Recipe

  • 1 1.) in a medium bowl, whisk marinade ingredients. place the chicken breasts in the marinade and let sit in the fridge for about 2 hours.
  • 2 2.) take the chicken breasts out of the marinade and grill for about 10-12 minutes (turning over once or twice as needed for even cooking).
  • 3 3.) remove the chicken from the grill, slice them as thinly as possible.
  • 4 4.) place the sliced chicken in each tortilla. spread pico de gallo mix in tortillas. add salsa, sour cream, lettuce, tomato, etc. as desired.
