Ingredients

- 2 limes, zest of
- 2 tablespoons coriander
- 1 cup couscous
- 3/4 cup chicken stock
- 1/4 cup lime juice
Recipe
- 1 finely grate zest of the lime then squeeze the juice out.
- 2 chop the coriander.
- 3 boil the chicken stock and lime jiuce together.
- 4 add couscous to stock.
- 5 allow to sit 5 minutes then fluff with a fork.
- 6 add zest and coriander and mix to combine.
- 7 good hot or cold.
