Peanut Butter Corn Chowder

Ingredients
- Servings: 4
- 2 tablespoons butter
- 1/2 cup celery, chopped fine
- 1/2 cup onion, chopped fine
- 1/2 cup chunky peanut butter
- 1 (14 1/2 ounce) can chicken broth
- 1 (10 ounce) box frozen corn
- 1 cup light cream or 1 cup half-and-half
Recipe
- 1 saute onion and celery in butter till tender.
- 2 remove from heat and add peanut butter stirring until melted.
- 3 stir in broth and corn.
- 4 bring to a boil stirring frequently.
- 5 reduce heat and simmer for 10 minutes, stirring occasionally.
- 6 remove from heat and stir in cream.
- 7 reheat just until hot not allowing to come to a boil.
