Lori's Drunken Chicken

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 3 lbs skinless chicken pieces
  • salt & fresh ground pepper (to taste)
  • 2 tablespoons butter
  • 1 cup whiskey
  • 1/2 lb mushroom (sliced thin)
  • 1/4 cup leek (sliced thin)
  • 1/2 cup heavy cream
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1 teaspoon whiskey

Recipe

  • 1 rinse chicken. pat dry. season.
  • 2 heat butter in a large skillet.
  • 3 add chicken. brown all over.
  • 4 add whiskey. reduce. cover. simmer 30 minutes.
  • 5 remove chicken to a platter. keep warm.
  • 6 to pan add enough water to make 2/3 cup.
  • 7 add the mushrooms and leeks. simmer 10 minutes.
  • 8 whisk in the cream, flour, lemon juice and whiskey. simmer until thickened.
  • 9 return chicken to re-heat.
