Mini Chicken-herb Burgers

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup breadcrumbs, such as panko
  • 1 lb ground chicken
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, minced (flat leafed or curly)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 tablespoon lemon juice
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon olive oil

Recipe

  • 1 place bread crumbs in shallow dish and set aside.
  • 2 in bowl, combine chicken and seasonings.
  • 3 form mixture into 8 patties, each flattened and about 2 inches in diameter.
  • 4 press patties into the bread crumbs to coat each side.
  • 5 in a large nonstick skillet, heat the oil over medium heat. cook, turning once, until each side is browned and the patties have firmed up, about 10 minutes total.
  • 6 serve hot.
