Italian Chicken With Olives

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup seasoned bread crumbs
  • 5 ounces romano cheese
  • 3 boneless skinless chicken breasts, sliced in thirds, lengthwise
  • 2 tablespoons olive oil
  • 1 (10 ounce) can diced tomatoes, drained but juice reserved
  • 7 garlic cloves, crushed
  • 4 ounces kalamata olives, sliced
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon red pepper flakes
  • 5 teaspoons dried basil

Recipe

  • 1 mix breadcrumbs and cheese.
  • 2 coat chicken slices with breadcrumb mixture on both sides.
  • 3 heat olive oil in skillet to medium heat.
  • 4 add chicken pieces and cook until golden brown. set aside and keep warm.
  • 5 add tomatoes, garlic, olives, vinegar and pepper flakes and half cup of liquid from tomatoes.
  • 6 cook until slightly thickened and add basil.
