Lemon Roast Chicken

Ingredients

• 1 large roasting chicken
• 1 lemon
• 3/4 cup olive oil
• 1 garlic clove, crushed
• 1 teaspoon basil
• 1 teaspoon salt
• 1 teaspoon oregano
• 2 cups dried seasoned stuffing mix
• 60 g butter
• 2 eggs
• 1 1/2 cups water

Recipe

• 1 place the whole lemon into the chicken cavity.
• 2 combine olive oil, salt, garlic, basil, and oregano. rub the oil into the chicken.
• 3 bake in a moderate oven for about 1 1/2 hours.
• 4 combine stuffing mix, butter, eggs, and water. leave sitting for 2 minutes.
• 5 roll into 12 balls, and add to roasting dish for the last 30 minutes of cooking time.
