Pinto Beans Rancheros

Ingredients
- 1 lb pinto beans, cleaned and soaked
- 4 slices bacon, thick sliced
- 1 medium onion, chopped
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 3 large garlic cloves, minced
- 1/2 teaspoon cumin
- 1/4 teaspoon dried thyme
- 2 cups chicken broth
- 1 small bay leaf
Recipe
- 1 cook beans until tender, but not completely soft (30-40 minutes).
- 2 meanwhile, in 12-inch skillet, cook the bacon over moderate heat until crishp and browned. spoon off and discard all but 1 tablespoon fat.
- 3 add onion, red and green pepper and garlic.
- 4 cook for 1 minute, stirring.
- 5 reduce heat to low, cover and cook for 10 minutes, stirring occasionally, until vegetables are soft.
- 6 dran beans and stir into skillet with cumin, thyme, broth and bay leaf.
- 7 simmer uncovered over medium heat until most of the liquid has evaporated and beans are soft, 10-15 minutes.
- 8 remove bay leaf and season with salt and pepper to taste.
