Pinto Beans Rancheros

Ingredients

  • 1 lb pinto beans, cleaned and soaked
  • 4 slices bacon, thick sliced
  • 1 medium onion, chopped
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 3 large garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon dried thyme
  • 2 cups chicken broth
  • 1 small bay leaf

Recipe

  • 1 cook beans until tender, but not completely soft (30-40 minutes).
  • 2 meanwhile, in 12-inch skillet, cook the bacon over moderate heat until crishp and browned. spoon off and discard all but 1 tablespoon fat.
  • 3 add onion, red and green pepper and garlic.
  • 4 cook for 1 minute, stirring.
  • 5 reduce heat to low, cover and cook for 10 minutes, stirring occasionally, until vegetables are soft.
  • 6 dran beans and stir into skillet with cumin, thyme, broth and bay leaf.
  • 7 simmer uncovered over medium heat until most of the liquid has evaporated and beans are soft, 10-15 minutes.
  • 8 remove bay leaf and season with salt and pepper to taste.
